Lalit Rai has joined Fairfield by Marriot Pune Kharadi as the Head Chef. Born and brought up in Mumbai, Chef Lalit has completed his Bachelor’s Degree in Hospitality and Tourism Management from Alagappa University and a Diploma in Hotel Management from Arun Muchhala Institute of Hotel Management. With more than 10 years of experience in the culinary department, Chef Lalit comes with the comprehensive skill set and knowledge in Food & Beverage operations.
A recipient of multiple awards, Chef Lalit’s earlier assignments included Fairfield by Marriott Lucknow, Renaissance Convention Center Mumbai, J W Marriott Marquis Dubai, The Lalit Mumbai, Renaissance Marriott Mumbai, Rodas An Ecotel Hotel Mumbai. Not only this, but the food preparations by Chef Lalit during the launch of Marriott on Wheels were the highest sold and liked highlights of the event. He is an expert in the culinary domain of the hospitality industry and specialises in Western Cuisine, such as Thai, Japanese and Pan-Asian foods.
His roles and responsibilities include the in-room dining, restaurant, banquet event operations and hotel’s overall culinary operations, menu designing, profitability and menu engineering, strategic planning and market survey for upcoming menu implementation, maintain and conduct training in related to perform higher quality. A great mentor and a support system for his team, Chef Lalit’s nature enhance his personality to maintain a team spirit to create wonders in the kitchen and special moments for his guests.
