Fairfield by Marriott Kolkata and Ozone Convention Center have announced the appointment of Prasanta Nandi as the new Director of Food & Beverage.

Prasanta brings over 15 years of experience across luxury and upper-upscale hospitality brands. He joins the property with a strong background in Food & Beverage operations, guest experience, commercial performance and strategic departmental leadership.

He began his hospitality journey on the operations floor, gaining hands-on experience across guest service, restaurant operations, bars, banqueting and outdoor catering. This operational foundation has shaped his leadership approach, giving him a strong understanding of both guest-facing experiences and backend processes.

Over the course of his career, Prasanta has been associated with leading hospitality brands including Hyatt, Marriott, Starwood and The Leela Group. His experience spans restaurant management, beverage operations, large-format banqueting, outdoor catering, sales strategy and overall Food & Beverage leadership.

Prior to this, Prasanta served as Director of Food & Beverage at Hyatt Centric Ballygunge Kolkata, where he led the hotel’s F&B operations, including restaurants, bars, banquets and dining strategy. During his tenure, the hotel’s dining concepts earned several industry recognitions. Cal-On and YAYAvar were recognised at the Times of India Food and Nightlife Awards 2025 and 2026 respectively, while YAYAvar was also honoured at the Telegraph Food Awards 2026. Cal-On further received recognition as Best Microbrewery/Taproom in the People’s Choice category by 30 Best Bars and ET F&B Leaders East, along with honours from the NDTV Food Awards and The Economic Times Restaurant and Nightlife Awards in 2025.

Throughout his career, Prasanta has led multi-outlet F&B operations, managed large-scale banqueting and high-profile events, improved operational efficiencies and supported financial performance. His contributions to the hospitality industry have been recognised through awards such as the BW Hotelier National Zone Winner – Head of F&B 2024–25 and the F&B Manager Award by IHC London and IIHM in 2023.

In his new role, Prasanta will focus on strengthening Fairfield by Marriott Kolkata’s Food & Beverage offerings through enhanced guest experiences, operational consistency, market-relevant dining initiatives and stronger commercial performance. His focus will also include positioning the hotel as a dependable dining destination for both in-house guests and Kolkata’s local audience.

At Ozone Convention Center, he will work towards strengthening the venue’s positioning for weddings, conferences, corporate events and social celebrations. With his experience in large-scale banqueting and event management, he will focus on planning, service efficiency and personalised guest engagement.

Beyond his professional achievements, Prasanta is passionate about travelling through rural India, where he draws inspiration from regional cuisines, cultures and culinary traditions.
