Chef Swatantra Gautam embarked on his culinary journey in 1996 and has exposure to the culinary world regionally as well as globally. He has extensive experience at some of the top hotels and restaurants in the country. He is geared up for the challenge of curating signature global cuisine, which he hopes will suit every taste and meet every budget. Having worked with luxury and business properties with extensive training and development, succession planning, and team management, he is known for creating bespoke culinary experiences for guests.

Chef Swatantra Gautam previously was the Executive Chef at Accor Goa. In his role there he was spearheading the culinary teams and related operations, curating menus and presenting innovative dishes with a distinctive twist. Chef Swatantra started his career as a management trainee at Old World Hospitality at India Habitat Centre and after the completion of 18 months program he was specialized in South East Asian Cuisine with Old World Hospitality flagship Brand “Oriental Octopus”. He took his journey overseas when he got an opportunity to work at Korea House at Seoul, South Korea where he learnt the basic and advanced skills of Korean Cuisine.

Chef Swatantra joined Jumeirah branded restaurant chain “The Noodle House”, Indian Operations in collaboration with Dish Hospitality Mumbai as Head Chef (Northern India Operations)and was an opening team head for The Noodle House (now The Tasty Tangles) and successfully opened The Tasty Tangles In New Delhi and Bangalore. From there he created his magic at Zazen and Kebab Khan, a flagship restaurants of Alchemist Hospitality with all his experience and creativity. Chef created his magic with DLF Golf Resorts Ltd. at Gurgaon and Pan Asian Brand Kylin in Delhi and NCR wherein he headed the Food Production.

Outlining the approach to food that will be reflected in fresh thinking, Chef Swatantra Gautam stresses that the taste and texture of each dish are his main priority. And he offers a personal commitment to quality, value, and culinary creativity. Absorbing nuances and specialties of ethnic cuisine, particularly Asian. His cuisine is unique, based on the Asian philosophy of natural seasonal flavors, enhanced by augmented classic techniques of European cuisine.  This coupled with his Asian background sets the tone for Chef’s Modern Asian cuisine accented with ingredients and spices from around the world.
