Infused with aromatic spices and handpicked currants from the lush terrains of Mattancherry and a double-maturing process that was introduced by Chef Varkey, Mentor of the CGH Earth Group, the Mattanchere Spice Matured Plum Cake promises an exquisite gastronomic expedition.
The artisanal recipe uses a slow-cooking process that unfolds over 10-12 months, driven by the unwavering passion of tradition. The fruit mixture used in the cake embarks on a maturing process in an air-tight drum, allowing nectar formation through slow maturation. A whopping 57% of the cake comprises this matured fruit and nectar, infusing the real taste into every bite. The remaining is packed with trans-fat-free butter, sugar, flour, and eggs, creating the perfect crumb.
As the nectar matures within the crumb, the cake undergoes an additional round of maturation. Packed into tins, these treasures are stored in a dehumidified atmosphere, allowing the flavours to reach their peak.
