Chef Himanshu Joshi joins Malai Marke USA as Sous Chef to sharpen menus and uphold standards

Malai Marke USA has announced the appointment of Chef Himanshu Joshi as Sous Chef, further strengthening its culinary leadership team with his extensive experience across premium Indian restaurants in India and the United States.
Chef Himanshu Joshi brings a diverse and accomplished culinary journey, having worked with some of the most respected names in the Indian food industry. He is currently associated with The Leela Ambience, New Delhi (Dilli 32 Restaurant), where he serves as Sous Chef, contributing to the restaurant’s celebrated North Indian culinary offerings rooted in heritage recipes and refined techniques.
Earlier in his career, he had the opportunity to work under Chef Manish Mehrotra at Indian Accent, both in New York and New Delhi, where he served as Chef de Partie. Working alongside one of India’s most globally acclaimed chefs, he gained invaluable exposure to progressive Indian cuisine, innovation-driven menu development, and world-class kitchen standards.
He also served as Junior Sous Chef at Riga Foods under celebrated Chef Ritu Dalmia, expanding his expertise in refined Indian and modern European culinary techniques.
His professional journey further includes experience with The Lalit, New Delhi (Baluchi Restaurant), India Habitat Centre, Lodhi Road, Pan India Food Solutions Pvt. Ltd., and Nirula’s Hotels, strengthening his foundation across luxury dining, institutional catering, and high-volume food operations.
Chef Joshi’s excellence has been recognised at the national level. He received a Merit Certificate Award at the AAHAR Competition (Pragati Maidan, 2015) and earned a Mistry Audit Certification with an impressive 99% score, reflecting his strong commitment to quality, hygiene, and operational standards.
