Fairmont Mumbai has announced the elevation of Saif Shaikh to Assistant Director of Food & Beverage for Fairmont Mumbai and Roswyn, A Morgans Originals Hotel

In his expanded role, Shaikh will oversee food and beverage operations across the restaurants, bars, banquets, in-room dining and event divisions of both properties. His responsibilities will include revenue strategy, operational planning, guest experience, team development and the implementation of new dining initiatives.
Shaikh has been part of Fairmont Mumbai’s leadership team and has contributed to the management of its restaurants, bars, banqueting operations and other guest dining experiences.
He brings more than 11 years of experience in the luxury hospitality sector, having worked with brands including Fairmont, Ennismore, Hilton Garden Inn, JW Marriott, Grand Hyatt and Sofitel. His experience covers multi-outlet operations, revenue management, profitability, restaurant launches and team leadership.
Before joining Fairmont Mumbai, Shaikh served as Director of Restaurants & Bars at JW Marriott Pune. During his tenure, he managed the hotel’s dining operations and was involved in the launch of Tao Fu, a Sichuan speciality restaurant.
He has also held leadership positions at Grand Hyatt Mumbai, where he managed restaurants including China House and Celini.
