We wait all year for celebrating food for the Navratri festival in mid-April. The 9-day of festivities puts a spotlight on what is traditionally known as Navratri fasting food but these meals are probably some of the most nutritious and diet-friendly meals in the world.

Chef Vikramjit Singh Ahluwalia, Radisson Gurugram, Udyog Vihar shares two of his favourite dishes to cook during Navratri, both of which are great for snacking too.

Till or Sesame seeds make a wonderful ingredient as they are rich in Calcium, Iron, Zinc and Protein. Khajoor or dates are sugar free, have lots of fibre and are a good source of calcium, potassium, magnesium and phosphorus. Peanuts are loaded with fibre, good fat and magnesium among other nutrients.

Khajoor Aur Till ke Ladoo by Chef Vikramjit Singh Ahluwalia

Ingredients

  • Dates ( Khazoor), 500 Gms
  • Khoya, 100 Gms
  • Ghee, 50 Gms
  • Green Cardamom, 10 Gms
  • Sesame Seed ( White), 100 Gms

Method

  1. Take seedless dates and chop roughly.
  2. Heat a pan and add white sesame seeds for roasting.
  3. After cooling sesame seed, add green cardamom and the sesame seeds in a grinder.
  4. Grind till the mixture is coarsely grounded.
  5. Heat khadai, add ghee and saute the khoya.
  6. Take a mixing bowl; add sesame-cardamom powder, chopped dates and Khoya mix.
  7. Roll the mixture into round balls and coat them with roasted sesame seeds.
  8. Ladoo are ready and can be served.

Moongfali Aur Till ke Laddoo by Chef Vikramjit Singh Ahluwalia

Ingredients

  • Peanuts (without skin), 200 Gms
  • Ghee, 100 Gms
  • Khoya, 100 Gms
  • Green Cardamom, 10 Gms
  • Sesame Seed, 200 Gms

Method

  1. Heat a pan and add white sesame seeds for roasting.
  2. Add peanut, roast along with roasted sesame seeds.
  3. After cooling sesame seed, add green cardamom and put in the grinder.
  4. Grind till the mixture is coarsely grounded.
  5. Heat a wok, add ghee and sauté the khoya.
  6. Take a mixing bowl; combine half of sesame powder -peanuts mixture into Khoya.
  7. Roll the mixture into round balls and coat them with remaining roasted sesame- peanuts mixture.
  8. Laddoo are ready to be served
